Could someone explain to me why running the wheels against the axle head is better than trying to run the wheel centered between the car body and the axle head

There are a couple of factors at play here. IMHO keeping the wheel centered on the axle for the entire run is impossible and will cause the car to move side to side all the way down the track wasting energy and slowing sown the car. Canting the axles so the wheel rides against the axle head causes less friction than the wheel riding against the body.
