I used an old (2 yrs +)opened tube of Hobe Lube on one of our cars. Our times dropped dramatically after 7 races. Could the graphite have gone bad, dried up, etc?

Moister will severely affect how your graphite performs.
Thats why when I am done tuning a car and ready for a race, I seal the car in a zip lock bag with a bag of desiccant inside with the car.
This can be a real problem if you live in a real humid environment.
