Does coating the wheels (tread) side with graphite help with the speed of the car. Or is it better to leave the wheels untreated?

I recall seeing a thread about this and it seemed that the thinking was that it would have a negative effect because it would be better for the wheels to have some grip so that they could help track the car straight versus possibly sliding around. I know in a recent PWD event I was surprised to see a 3rd place car with what I thought were somewhat corse wheels but I guess your mileage may vary.

We will be running on alum. track and I was thinking the graphite would make the wheels slip more than spin.

If I remember my research correctly, graphite on the outside of the wheels is not helpful on a wood track, and good on an Al track, speed-wise. There is the increased risk of side-to-side fishtailing, though, but I didn't see it on my boys' cars. We graphite our wheels, and we have won handily for the past two years.
